Becky’s Lentil Stew

Serve with a spinach salad, whole grain bread, fruit and cheese.

2 cups lentils                                                                                       020

8 cups water

2 vegetable bouillon  cubes

1 tsp salt

3 bay leaves

1 onion

3 carrots, chopped

3 celery ribs, chopped

balsamic  vinegar

olive oil

1. Chop onion and cook in olive oil until wilted or browned  2. Add remaining ingredients, except vinegar, to wilted onion and simmer until lentils are soft-About one hour  3. Add 1 to 2 tablespoons of balsamic vinegar just before serving.

Walnut Loaf

Serve with roasted potatoes and baked sweet potato baked in the oven at the same time.  This recipe can also be made with soaked cashews or pecans.

2 cup walnuts finely chopped or chopped in a food processor

4-5 eggs  (4 if you use the yolks, 5 if you make all egg whites or use a few yolks)

¼ Cup chopped onion

3 ribs chopped celery                                             028

1 ½ tsp salt

1 T. basil dried or fresh

2 cloves garlic or 1 tsp dried garlic

1 T. vegan mustard

1 T. Balsamic vinegar

Fresh parsley to taste (optional)

Mix all above ingredients together and place in an oiled glass loaf pan.  Bake covered for 45 minutes  at 375 degrees.  Turn off the oven and let sit in the oven to continue baking for ten or more minutes(saves energy).  Remove and slice to serve.  6 to 8 servings

Roast potatoes and bake sweet potato at the same time.

Serve with salsa or any sauce of your choice, and eat the leftovers on sandwiches.

Kale and Quinoa Recipe:

Recipe for Kale and Quinoa

1 Cup Quinoa rinsed                                             001

1 onion

1 bunch organic kale (take the ribs off)

1 vegetarian bouillon cube

2  cups water

1/2 tsp salt

Lime juice

Brown onion in olive oil until wilted, add the water and a bouillon cube and boil.  Add the salt, rinsed quinoa and simmer for 10 minutes.  Steam the kale  on top of the cooking quinoa for about 10 minutes. Mix kale ( torn into 1 inch pieces) and quinoa together.  Add lime juice.  Keep warm until serving.

Garnish with nuts, goat cheese or Daiya cheese (vegan option)

Serve with fruit, garlic bread, raw vegetables and sliced tomatoes  USA grown quinoa

Becky’s Quiche                                                                           

4 eggs

1 package chopped frozen spinach-thawed and drained

¾ lb to 1 lb shredded mozzarella  cheese

¾ tsp (about) salt

1/3 cup milk 1/3 cup oatmeal

2 Tablespoons or more olive oil

Parmesan cheese for topping

1 tomato cut into thin wedges

Mix eggs, and then mix in remaining ingredients except tomato and parmesan cheese.  Spray pie plate and then cover bottom with thin layer of olive oil.  Pour in egg mixture.  Top with tomato wedges and sprinkle with parmesan cheese.  Bake at 350 degrees for about 35 min.—-I often turn off the oven and let it sit in the oven(maybe 15 min.).  The cheese will get too dark if it is baked too long
